Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef in a dripping pan without water for the first 30 minutes to sear the outside.

  3. After 30 minutes, reduce the oven temperature.

  4. Season the meat with coarse sea salt and black pepper.

  5. Add enough water to the pan to make gravy.

  6. Roast for 15 minutes per pound for rare or 20 minutes per pound for well done.
