Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young green corn
Provides the main bulk and sweet corn flavor of the croquettes.
Flour
Thickens the corn mixture and helps it hold its shape when fried.
Sweet milk
Moistens the mixture and makes it creamy and tender inside.
Butter
Adds richness and flavor to the milk and helps the interior stay soft.
Eggs
Bind the mixture and set when cooked, giving structure and lightness.

The step that matters

Let the mixture cool before shaping. A warm, loose mixture is too soft to form into balls and can fall apart or burst in hot fat. Cooling lets the starch and egg firm up so the croquettes hold their shape while frying.
