Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut off a portion of the stalk from the mushroom caps.

  2. Peel the top and clean with a flannel and coarse sea salt.

Bake

  1. Place in a tin baking dish with a small lump of butter on each mushroom.

  2. Sprinkle a little pepper over them.

  3. Bake at 400°F (200°C) for about 20 minutes.

What each ingredient does

Mushroom flaps
Form the main body of the dish and soften into a tender, juicy texture as they bake.
Butter
Adds fat and moisture, carrying flavour and helping the mushrooms brown lightly in the oven.
