Pie-plant Pie with One Crust

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the egg yolk and sugar until well combined.

  3. Pour the mixture into a prepared pie crust.

  4. Bake until set, about 30-40 minutes.

  5. In a separate bowl, beat the egg white until stiff peaks form, then gradually add 1 tablespoon of sugar.

  6. Spread the meringue over the baked pie and return to the oven for 5-10 minutes until lightly browned.
