Corn Starch Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the flour, corn starch, and cream of tartar together.

  3. In a separate bowl, cream the butter and sugar until light and fluffy.

  4. Add the sweet milk and the yolk of 1 egg to the butter mixture and mix well.

  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.

Fold and bake

  1. In another bowl, beat the egg whites until stiff peaks form.

  2. Gently fold the beaten egg whites into the batter.

  3. Flavor the batter with almond extract.

  4. Pour the batter into a greased loaf pan and bake for about 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Sugar
Creamed with butter to add sweetness and help create a light, fluffy texture.
Eggs
Whites beaten to stiff peaks provide lift and structure; the yolk adds richness and binding.
Corn starch
Lightens the crumb and softens the texture, since it contains no gluten.
Flour
Provides the main structure that holds the cake together as it bakes.
Cream of tartar
Acidifies the batter and stabilizes the whipped egg whites, helping them hold their peaks.

The step that matters

Folding in the egg whites. Stirring vigorously knocks out the air whipped into the egg whites, leaving a dense cake. Fold gently with a spatula so the batter stays light and rises well.
