What each ingredient does

Ground coffee
Provides the coffee solids and flavour that the hot water extracts.
Boiling water
Extracts flavour and aroma from the grounds and brings the brew to serving heat.
Cold water
Cools the surface slightly so the grounds sink and settle.

The step that matters

Letting the coffee steep for the right time. Coffee left in hot water for too long extracts bitter compounds, so the brew turns harsh. Steeping for the stated time keeps the flavour balanced.
