What each ingredient does

Currants
Provide the juice, along with natural pectin and acid that help the jelly set.
Granulated sugar
Sweetens the jelly and helps it set into a firm, spreadable gel.

The step that matters

Adding the sugar as soon as the juice boils. Sugar must dissolve fully and evenly into the hot juice. Stirring well at this point keeps it from settling or scorching, so the jelly sets evenly instead of turning grainy or sticking to the pan.
