What each ingredient does

Green peppers
The main vegetable, which softens during soaking and scalding and holds the stuffing.
Coarse sea salt
Draws water out of the peppers during the long salt soak, helping them keep their shape and firmness.
Vinegar
Provides the acidity that preserves the peppers and gives the pickle its sour flavor.
Alum
Helps the peppers stay firm during repeated scalding.
Cabbage
Forms the bulk of the stuffing and adds crunch and moisture.
Horseradish
Adds sharp, pungent heat to the stuffing.

The step that matters

Scalding for 3 consecutive days. Repeated heating in the vinegar and water mixture softens the peppers gradually. Heating them too hard or too long can break them down, while too little heat leaves them unsafe or unevenly pickled.

Swap the mace
