What each ingredient does

White lettuce
Forms the crisp, leafy body of the salad.
Sweet oil
Adds fat and a smooth mouthfeel that coats the leaves.
Vinegar
Adds acidity that brightens the dressing and balances the oil.
Coarse sea salt
Seasons the leaves and draws out flavor from the dressing.

The step that matters

Drain the lettuce thoroughly. Water left on the leaves dilutes the dressing so it slides off instead of clinging. Dry leaves let the oil and vinegar coat them evenly and keep the salad crisp when served.
