Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Wash the tapioca and soak it in 2 cups of cold water for 1 hour.

  2. Boil the soaked tapioca in 1 quart of cold water until it looks clear.

Assemble and bake

  1. Slice the tart apples and layer them in a pudding dish, sprinkling with sugar.

  2. Pour the cooked tapioca over the apples.

  3. Bake in a 350°F (175°C) oven for 30 minutes.

Serve

  1. Serve warm or cold with cream and sugar or soft custard.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the cooking liquid into a soft, translucent pudding as its starch gelatinises.
Tart apples
Provide the main fruit flavour and a tangy contrast to the sweet pudding.
Sugar
Adds sweetness and helps balance the tartness of the apples.

The step that matters

Boiling the soaked tapioca until it looks clear. Tapioca starch only thickens fully when it is cooked until the granules swell and turn translucent. Stopping early leaves a cloudy, grainy texture and a raw starchy taste.
