What each ingredient does

Fresh strawberries
Provide the fruit, flavor, and texture that the finished canned product keeps.
Sugar
Sweetens the berries and helps preserve their flavor and texture during processing.

The step that matters

Fill jars to the top before sealing. Leaving little air in the jar reduces headspace air that can cause discoloration and spoilage, and helps the jar seal properly.
