The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, smooth structure that holds its shape when frozen.
Sugar
Adds sweetness and softens the texture by lowering the freezing point.
Orange juice
Provides the main flavour, acidity and liquid for the sherbet.

The step that matters

Dissolve the gelatin fully before adding the other liquids. Gelatin must be hydrated in cold water, then melted in boiling water, or it will not set evenly. Undissolved granules leave gritty or rubbery spots in the frozen sherbet.

Swap the orange

How well each one fits the dish's main ingredients (gelatin, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against gelatin, sugar. Candidates are from the same food group and used in at least 100 recipes.
