What each ingredient does

Beef
Forms the main body of the daub and provides the meaty texture once cooked.
Vinegar
Acidifies the meat during marinating, tenderizing its surface and adding tang.
Gelatin
Sets the cooking liquid into a firm jelly that holds the sliced meat together.
Pork
Adds fat and flavor through strips inserted into the beef.

The step that matters

Cook the beef in water for 4 to 5 hours. Long, gentle simmering breaks down connective tissue in the tough beef so it becomes tender rather than dry. The pot should be nearly full of water so the meat stays submerged and cooks evenly.

Flavor stand-ins for the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, pork, clove, garlic, pepper, vinegar, gelatin):

  1. Capsicumabout as good a flavor fit
  2. Onionthe original
  3. Tomatoabout as good a flavor fit
  4. Potatoabout as good a flavor fit

Fit is the average pairing score against beef, pork, clove, garlic, pepper, vinegar, gelatin. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
