Oyster Rarebit

Ingredients

Directions

Prepare the oysters

  1. Clean and remove the gills from the oysters.

  2. Parboil the oysters in their own liquor until the edges curl, then remove to a hot bowl.

Make the rarebit

  1. In a chafing dish, melt 1 tablespoon of butter.

  2. Add ½ lb of cheese broken into small pieces, along with ¼ teaspoon each of salt, mustard, and cayenne pepper.

  3. While the cheese melts, beat the eggs slightly and mix with the oyster liquor.

  4. Gradually combine the egg mixture with the melted cheese, then add the oysters.

  5. Serve over hot toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into a smooth sauce that forms the body of the rarebit.
Eggs
Thicken the cheese sauce as they set gently with the heat.
Oysters
Provide the main seafood flavor and a tender, briny texture.
Butter
Adds richness and helps the cheese melt smoothly without sticking.
Mustard
Adds a sharp tang that balances the richness of the cheese.

The step that matters

Combining the egg mixture with the melted cheese. Eggs can curdle or scramble if they meet high heat too quickly. Adding the egg mixture gradually and keeping the heat moderate lets it thicken into a smooth sauce.
