What each ingredient does

French chestnuts
Provide the bulk and starchy, soft body of the stuffing once cooked and mashed.
Butter
Adds richness and fat, giving the stuffing a smooth, tender mouthfeel.
Cream
Adds moisture and softness, helping the mashed chestnuts hold a smooth texture.
Cracker crumbs
Add dry, toasty body and structure that gives the stuffing some texture and bulk.

The step that matters

Cook the chestnuts until soft. Chestnuts must be fully softened before mashing; if they are underdone, the mash will be lumpy and grainy. Thorough cooking gives the starches time to gelatinise so the puree becomes smooth.
