What each ingredient does

Butter
Enriches the onion base and carries flavor while the flour cooks into a roux.
Flour
Thickens the stock and cream into a smooth, sliceable sauce base.
Cream
Adds richness and moisture, giving the filling a soft, velvety texture.
Egg yolk
Enriches and sets the thickened filling, binding it so it holds together.
Mushrooms
Add earthy savoriness and moisture to the filling.
Truffles
Add a concentrated, aromatic earthy flavor to the filling.

The step that matters

Once thickened, add chopped mushrooms, truffles, sweetbread trimmings, and parsley.. Egg yolk thickens when heated, so the filling must be thick before the egg is stirred in and cooks; overheating can scramble it, leaving a grainy texture.
