Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Butter a tin timbal mold or cup.

  2. Line the mold with the red pepper.

  3. Butter the inside of the pepper and fill it with chopped mushrooms.

  4. Crack a raw egg into each pepper, then sprinkle with salt and pepper.

Bake and serve

  1. Place the mold in a baking pan half full of boiling water.

  2. Bake in a hot oven at 400°F (200°C) until the egg is thoroughly cooked.

  3. Turn out and serve with white sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red pepper
Forms a edible cup that holds the filling and gives the timbale its shape.
Butter
Adds fat for richness and helps the pepper and mold release cleanly.
Mushrooms
Add savory flavor and moisture to the filling inside the pepper.
Egg
Sets when heated, binding the filling into a firm, sliceable base.

The step that matters

Bake until the egg is just set. Egg proteins coagulate as they heat, so the white firms before the yolk. Baking until the egg is just set keeps it tender; overbaking turns it rubbery and dry.
