Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and soak the rice, then place it in a quart pudding dish.

  2. Fill the dish with milk and cream, and add the salt.

Bake

  1. Bake in a 350°F (175°C) oven for about 30 minutes.

  2. Stir in the sugar, vanilla, and raisins, then return to the oven.

  3. Cook slowly for two hours, adding more hot cream if the milk boils down.

Top and serve

  1. Just before serving, top with fresh marshmallows and bake until they swell.

  2. Garnish with candied cherries or red jelly and serve with whipped or plain cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Softens during long baking and thickens the milk into a creamy pudding body.
Milk and cream
Provide the liquid that slowly cooks the rice and gives the pudding its richness.
Sugar
Adds sweetness and helps the pudding brown slightly as it bakes.
Raisins
Add chewy texture and concentrated sweetness throughout the pudding.
Fresh marshmallows
Melt and swell on top, adding a soft, sweet, lightly browned crust.

The step that matters

Cook slowly for two hours, adding more hot cream if the milk boils down. Low, slow heat lets the rice absorb liquid and turn creamy without scorching. Adding hot cream keeps the liquid level up and the temperature steady, so the pudding does not dry out or burn on the bottom.

Swap the raisin

How well each one fits the dish's main ingredients (rice, milk, cream, sugar, vanilla):

  1. Coconutfits better
  2. Strawberryfits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against rice, milk, cream, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
