Ingredients

Directions

  1. Sift the flour, roll the sugar, sift the spices, and prepare the fruit beforehand.

  2. Break the eggs into a cup, ensuring no yolk gets in, and keep them cold for better whipping.

  3. Use a wooden spoon in an earthen vessel to mix the ingredients, avoiding your hands.

  4. If the oven is too hot at the bottom, place the pan on a brick; if too hot at the top, cover with paper.

  5. Sprinkle the fruit with a little flour to prevent sinking during baking.

  6. Layer the fruit in the middle and near the top for even distribution.

  7. Add the flour just before baking.

  8. If using beaten egg whites, fold them in last to retain air bubbles for lightness.

  9. Bake the cake as soon as it is ready.
