Oysters and Macaroni

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Boil the macaroni in salted boiling water for 25 minutes or until very tender, then drain thoroughly.

  2. Layer the drained macaroni in a deep fire-proof dish.

Assemble and bake

  1. Add a thick layer of oysters on top, seasoning with cayenne, salt, and grated lemon peel.

  2. Pour the cream or white sauce over the oysters.

  3. Cover the top with breadcrumbs and brown in a 400°F (200°C) oven.

  4. Bake for 10 minutes until the oysters are fully cooked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the sturdy base layer that holds the dish together and absorbs flavour.
Oysters
Provide the main seafood flavour and become tender as they cook through.
Cream or white sauce
Adds moisture and richness so the dish does not dry out in the oven.
Bread crumbs
Form a crisp, golden top through browning in the oven.

The step that matters

Baking until the oysters are fully cooked. Oysters turn firm and rubbery when overcooked, so the bake should be timed to just cook them through while the top browns.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, cream, bread, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits less well
  4. Cherryfits less well

Fit is the average pairing score against oyster, cream, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
