Why it works: Crab and butter work together. They rank in the top 10% of all ingredient pairs, and cooks put them together in 812 recipes. Both carry nonanal, which smells fat, citrus. The science ↓
Soft-shell Crabs Fried
Ingredients
Directions
Prepare
Raise the ends of the crabs and remove the sand-bags and spongy substance from beneath the shells.
Wash the crabs well and wipe them dry.
Sprinkle the crabs with salt and pepper.
Fry and serve
In a frying pan, heat equal parts of lard and butter until boiling.
Carefully lay the crabs in the hot fat.
Turn the crabs when they are partly cooked, leaving them longest on the white or under side.
Cook for 10 to 15 minutes, depending on the size of the crabs.
Rub a little fresh butter over the backs of the crabs when serving, and serve very hot.

What each ingredient does
- Soft-shell crabs
- The main ingredient, cooked whole with its soft shell, so the shell becomes crisp and edible.
- Lard
- A high-heat frying fat that conducts heat quickly and helps the shell crisp.
- Butter
- Adds rich flavour and golden browning to the frying fat and the finished crab.
The step that matters
Carefully lay the crabs in the hot fat. Hot fat sears the shell quickly, sealing in juices and giving a crisp coating. Crabs placed in cool fat soak up grease and cook unevenly. Butter can also burn if the fat is overheated.
