Beef Roll

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and salt.

  3. Cut in butter until the mixture resembles coarse crumbs.

  4. Stir in milk to form a dough.

  5. Roll out the dough to ½ inch thick.

Fill and bake

  1. Spread the dough with dressing for Beef Roll and add minced cold beef.

  2. Roll up the dough tightly and place it seam-side up in a long loaf pan.

  3. Bake for about 30 minutes.

  4. When nearly done, brush the top with beaten egg.

  5. Return to the oven until nicely browned.

  6. Serve with Brown Sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the dough's structure once mixed with liquid.
Baking powder
Releases gas in the oven so the roll rises and becomes light.
Unsalted butter
Cut into the flour to create layers and a tender, flaky texture.
Milk
Hydrates the flour so it forms a workable dough and adds richness.
Minced cold beef
Provides the savory filling that the dough wraps around.
Egg
Brushed on top to promote browning and a glossy finish.

The step that matters

Cutting in the butter. The butter should stay cold and be left in small pieces within the crumbs. As it melts in the oven it creates steam and pockets that make the crust tender and flaky rather than dense.
