Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the loaf

  1. Chop the veal and fat salt pork very fine.

  2. Mix the chopped meat with the eggs and milk.

  3. Add the grated nutmeg, butter, grated onion, salt, and cayenne pepper.

  4. Form the mixture into a compact loaf and sprinkle with bread crumbs.

Bake and serve

  1. Bake in a 350°F (175°C) oven for 1½ to 2 hours, covering while baking.

  2. Serve cold with salad.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty structure.
Fat salt pork
Adds fat that keeps the lean meat moist and adds savory richness.
Eggs
Bind the chopped meat together and set as the loaf bakes.
Milk
Adds moisture that keeps the loaf tender rather than dry and crumbly.
Butter
Adds fat and richness to the mixture.

The step that matters

Baking the loaf covered for the full time. Lean veal dries out easily in the oven. Covering traps steam so the loaf stays moist while the eggs set the mixture through.
