What each ingredient does

Calf's head
Forms the main body of the dish, becoming tender through long simmering in liquid.
Vinegar
Adds acidity that brightens the flavour and helps balance the richness of the meat.
Lemon juice
Acidity used on the surface to help keep the head looking pale and white.

The step that matters

Skimming the boiling water. Foam and impurities rise as the water first comes to a boil. Skimming them off keeps the cooking liquid clear and the meat tasting clean.
