Roasted Liver

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 300°F (150°C).

  2. Layer the finely chopped vegetables in the bottom of a roasting pan.

  3. Cover the liver with bread crumbs and lay thin strips of bacon on top.

  4. Place the liver on the vegetables in the pan.

  5. Roast slowly for about 2 hours, basting frequently with good stock or boiling water.

  6. Thicken the sauce as desired.

  7. Cover the liver with a second pan to prevent the surface from hardening.
