Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Smothered Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Singe the chicken.

  2. Draw the chicken.

  3. Split the chicken down the back.

  4. Wipe it with a wet towel, then with a dry towel.

  5. Spread the chicken open.

  6. Hold it in shape with a skewer through the wings.

  7. Place the liver under one wing and the gizzard under the other.

Smother and roast

  1. Lay the chicken in a roasting pan.

  2. Add the butter and boiling water over the chicken.

  3. Sprinkle with salt and pepper.

  4. Cover with a second pan to trap steam.

  5. Roast in a 400°F oven for about 1 hour, turning halfway through.

  6. When done, the chicken should be golden, not brown.

Finish and serve

  1. Optionally, place it on a hot gridiron breast down for 3 to 4 minutes to mark it.

  2. Transfer to a hot dish.

  3. Spread with butter.

  4. Sprinkle with chopped parsley.

  5. Let it stand for 2 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish and provides the meat that is cooked through and served.
Butter
Adds fat and richness, moistening the meat and helping it brown gently as it roasts.
Boiling water
Creates steam under the cover, keeping the chicken moist while it cooks.

The step that matters

Covering the pan to trap steam. The covered pan holds steam around the bird, so the meat stays moist while it cooks. Removing the cover too early lets moisture escape and dries the meat before it is done.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Garlicfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against chicken, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
