Fricassee De Poulet II

Ingredients

Directions

  1. Prepare the chicken for fricassee.

  2. In a rich creamy sauce, add enough curry powder to flavor it slightly and give it a yellow tint.

  3. Cook the rice until dry, then mix in enough strained tomato juice to achieve a light-red color.

  4. Form a wall of the rice mixture around the edge of a serving dish.

  5. Place the pieces of chicken in the center, with coarser parts below and the best on top.

  6. Pour the yellow sauce over the chicken.

  7. Sprinkle finely chopped parsley on top and place sprigs of fresh parsley evenly around the dish.

  8. Garnish the edge with quarters of hard-boiled eggs.
