Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold meat
Forms the body of the loaf and gives it its bulk and bite.
Veal stock
Provides liquid and natural gelatin that sets the loaf as it cools.
Gelatine
Adds extra setting power if the stock alone does not gel.

The step that matters

Checking whether the stock gels. Stock with too little natural gelatin will not set firm, so the loaf may crumble when turned out. Adding dissolved gelatin ensures the mixture holds its shape once chilled.

Swap the mace

How well each one fits the dish's main ingredients (meat, clove, veal, allspice, cinnamon, pepper):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against meat, clove, veal, allspice, cinnamon, pepper. Candidates are from the same food group and used in at least 100 recipes.
