What each ingredient does

Butter
Carries the flavours of the vegetables and ham and gives the sauce richness.
Velouté sauce
Provides the base body and thickness that the sauce is built on.
Cream
Adds richness and a smooth, velvety texture to the finished sauce.
Onion
Softens into a sweet, savoury base that flavours the sauce.
Raw ham
Adds savoury, meaty flavour to the sauce.

The step that matters

Gradually add the cream without overheating it. Cream that is boiled or heated too hard can split or turn grainy, and adding it slowly keeps the sauce smooth and rich.
