Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Peel the mushrooms and cut off the stalks half an inch from the top.

  3. Place the mushrooms, upper side down, in a pie dish.

  4. Sprinkle with coarse sea salt and black pepper.

  5. Add a small piece of butter on each mushroom.

Bake and serve

  1. Bake for 10 to 15 minutes, basting frequently with melted butter, until tender.

  2. Add a few drops of lemon juice before serving hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large mushrooms
Form the main body of the dish, softening as they bake to become tender.
Butter
Adds fat and moisture, and browns the surface as it melts and is basted over the mushrooms.
Lemon juice
Adds a bright acidity that lifts the rich, buttery flavour of the mushrooms.

The step that matters

Basting with melted butter during baking. Basting keeps the mushroom surfaces moist and helps them brown evenly. Without it, the caps can dry out before the flesh becomes tender.

Swap the lemon

How well each one fits the dish's main ingredients (mushroom, pepper, butter):

  1. Lemonthe original
  2. Plumfits about as well
  3. Mangofits less well
  4. Cherryfits less well
