Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the purée

  1. Press the boiled salsify through a colander.

  2. Add 2 ounces of butter, salt, milk, and cayenne to the salsify.

  3. Stir over low heat until the butter melts.

Bake and serve

  1. Transfer the mixture to a fire-proof baking dish.

  2. Place the dish in a pan of hot water.

  3. Top with fine bread crumbs.

  4. Dot with the remaining butter.

  5. Bake in a 400°F (200°C) oven for about 20 minutes until browned.

  6. Serve.

What each ingredient does

Salsify
Forms the bulk of the gratin and gives it its soft, earthy body.
Butter
Adds richness and fat, carrying flavour and helping the top brown.
Milk
Adds moisture that loosens the purée into a spoonable, creamy texture.
Bread crumbs
Forms a crisp topping that browns in the oven.

The step that matters

Place the dish in a pan of hot water. The water bath surrounds the dish with gentle, even heat, so the custard-like purée sets softly without curdling or drying at the edges.
