What each ingredient does

Eggs
Whites trapped by folding give the omelette its light, airy structure, while yolks add richness and set.
Bacon
Frying releases fat and browned flavour that carries through the filling.
Tomato
Cooked down, it adds moisture and a mild acidity to the filling.
Mushrooms
Softened as they cook, they add earthy flavour and moisture to the filling.
Milk
Adds moisture and softness to the egg mixture, keeping it tender as it sets.

The step that matters

Gently fold in the beaten egg whites. Overmixing knocks air out of the whites, so the omelette turns dense instead of light. Fold slowly with a broad motion so the foam stays intact.

Swap the onion
