Poached Eggs

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Fill a frying pan with water, add salt and vinegar, and bring to a boil.

  2. Prepare rounds of toast, trimming and buttering them.

  3. Break each egg into a saucer one at a time.

Poach and serve

  1. Once the water is boiling, remove the frying pan from heat and gently drop in the eggs.

  2. Return the pan to low heat and let the eggs simmer until set firm, about 3-4 minutes.

  3. Spoon some boiling water over the yolks to create a thin film of white.

  4. Remove the eggs with a skimmer and place one on each slice of toast.

  5. Trim any ragged edges, sprinkle with pepper, and serve immediately.

What each ingredient does

Eggs
Coagulating proteins set into a tender structure around the soft yolk as they simmer.
Vinegar
Acidity helps the egg whites coagulate faster and hold together in the water.
Bread
Toasted bread provides a crisp, sturdy base that holds the poached egg.
Butter
Fat adds richness and flavor to the toast beneath the egg.

The step that matters

Simmering the eggs gently in water that is not boiling hard. Vigorous boiling tears the delicate whites apart, while gentle heat lets the proteins set slowly around the yolk. Keeping the water barely simmering gives a neat, intact egg.
