Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg whites until stiff peaks form.

  2. In a separate bowl, beat the egg yolks with salt, then gradually add the sweet cream.

  3. Stir the cream mixture into the flour.

  4. Gently fold in the beaten egg whites until well combined.

Bake

  1. Pour the batter into greased gem pans or greased rings on a hot griddle.

  2. Bake in a preheated oven at 400°F (200°C) for 10 to 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites provide the lift and airy structure, while yolks add richness and set the crumb.
Flour
Provides the starch and gluten that give the muffins their body once baked.
Sweet cream
Adds moisture and fat, giving the muffins a tender, rich crumb.

The step that matters

Gently fold in the beaten egg whites. Whipped egg whites trap air that gives the muffins their rise. Overmixing or stirring vigorously knocks that air out, so the muffins come out dense and flat. Fold gently until just combined.
