Charlotte-russe Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and powdered sugar together.

  3. Add the egg yolks and mix well.

  4. Fold in the sifted flour and then gently add the beaten egg whites.

Bake and use

  1. Pour the batter into 2 shallow biscuit tins, about 1 inch thick.

  2. Bake until golden and a toothpick comes out clean.

  3. This batter is enough to line a quart mold for Charlotte Russe.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten to a froth, they trap air and give the batter lightness as it bakes.
Butter
Creamed with sugar, it adds richness and a tender crumb.
Flour
Sets the structure of the batter as it bakes.
Egg yolks
Add richness and help bind the batter.

The step that matters

Gently folding in the egg whites. Stirring vigorously knocks out the air whipped into the egg whites, so the cake bakes up dense instead of light and airy.
