Puff-paste

Ingredients

Directions

  1. Ensure the flour is dry and of the best quality.

  2. Wash the butter and chill it until firm.

  3. In a bowl, make a mound with the flour and create a hole in the center.

  4. Break the egg into the hole and mix it in lightly.

  5. Add enough ice water to make a soft paste.

  6. Flour a board and rolling pin, then roll out the paste thinly.

  7. Cut the butter into 4 equal parts and dot 1 part over the paste.

  8. Lightly dredge the butter with extra flour, fold the paste over from the sides to the center, then fold in thirds.

  9. Turn the dough and roll it out again until thin, adding the second part of butter and repeating the dredging and folding process.

  10. Continue this process with the remaining butter, rolling in the same direction each time.

  11. After the last rolling, fold the dough again and cut it into 3 parts.

  12. Place the parts on plates and refrigerate.
