Pastry Sandwiches

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Roll out the Puff Paste very thin.

  2. Place half of it on a baking sheet and butter it with preserves.

  3. Cover with the other half of the paste, press the edges together, and trim neatly.

  4. Score the surface in squares with a knife.

Bake and finish

  1. Bake in a 400°F (200°C) oven for 15 to 20 minutes until golden-brown.

  2. When nearly done, brush the surface with a mixture of egg yolk and milk.

  3. Sift powdered sugar over the top and return to the oven until nicely colored.

  4. Once cool, cut into pieces where marked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff paste
Forms flaky, layered pastry that puffs and crisps around the filling as it bakes.
Strawberry, raspberry, or other fine preserves
Adds sweetness and fruity flavor, and its moisture keeps the filling soft inside the pastry.
Egg yolk
Brushed on the surface, it helps the top bake to a glossy golden-brown color.
Powdered sugar
Sifted over the top, it caramelizes slightly in the oven for a sweet, colored finish.

The step that matters

Rolling the Puff Paste very thin. Puff pastry rises by steam forming between thin layers of dough and butter. Paste rolled too thick bakes dense and does not puff evenly.

Swap the strawberry

How well each one fits the dish's main ingredients (egg, milk, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Strawberrythe original

Fit is the average pairing score against egg, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
