Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cranberries
Provide the tart flavour and, once cooked and mashed, the thick body of the filling.
Sugar
Sweetens the tart cranberry filling and balances its acidity.
Egg yolk
Gives the lattice crust a glossy, browned finish when brushed on top.
Flaky pie crust
Forms the structure that holds the filling and bakes into a flaky shell.

The step that matters

Cook the cranberries gently and long enough. Cranberries are high in pectin and acid, and slow cooking with stirring lets the berries break down and thicken into a spreadable filling. Rushing this or letting it scorch leaves a runny or burnt-tasting filling.
