Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour and salt.

  3. In another bowl, beat the egg yolks and stir them into the milk.

  4. Combine the milk mixture with the flour and salt mixture until smooth.

  5. Beat the egg whites until stiff and fold them into the batter.

  6. Grease a large patty pan or shallow pudding dish with butter.

Bake and serve

  1. Pour the batter into the prepared dish.

  2. Bake for about 25 minutes until it rises high and forms a firm crust.

  3. Serve immediately with Hard Sauce or Strawberry Sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the batter lift, and yolks enrich it and help it set.
Flour
Starch gives the batter structure so it sets firm as it bakes.
Milk
Provides liquid that steams in the oven and helps the batter set into a custard-like body.

The step that matters

Folding in the beaten egg whites. Stiff whites trap air that expands in the hot oven, so the pudding rises. Folding gently preserves that air; stirring hard deflates the batter and the pudding will not rise high.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
