Chocolate Pudding

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Soak the cracker crumbs in water for a few minutes, then squeeze them out thoroughly.

  2. Dissolve the chocolate in a little of the milk.

  3. Add the remaining ingredients to the chocolate mixture.

Make the meringue

  1. Beat the egg whites to a foam.

  2. Add powdered sugar to the foam and beat until stiff and glossy.

Bake and brown

  1. Pour the mixture into a buttered dish and bake for 15 to 20 minutes at 400°F (200°C).

  2. Spread the meringue over the pudding.

  3. Place the pudding in a very hot oven for about 2 minutes, just long enough to brown the meringue slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness as they set during baking.
Egg whites
Whipped into a foam that gives the meringue its airy structure.
Chocolate
Provides the main flavor and deep color of the pudding.
Milk
Forms the liquid base that sets into a soft custard with the eggs.
Butter
Adds fat for a tender texture and rich flavor.
Sugar
Sweetens the pudding and helps the meringue become stable and glossy.

The step that matters

Browning the meringue. Sugar and egg proteins brown quickly at high heat, so the pudding should go into the very hot oven only briefly. A longer stay can scorch the meringue or overcook the custard beneath it.
