Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set gently with heat, giving it a rich, creamy body.
Whole egg
Adds additional protein to help thicken the sauce into a smooth cream.
Sugar
Sweetens the sauce and helps stabilise the beaten eggs for a smooth texture.
Sherry
Adds flavour and liquid, thinning the mixture as it is beaten in.
Lemon juice
Adds acidity that brightens the flavour of the rich, sweet sauce.

The step that matters

Keep the sauce over gentle heat while stirring. Egg proteins set at temperatures near boiling. If the heat is too high or the sauce is left unstirred, the eggs can scramble and curdle instead of thickening smoothly into a cream.
