Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and softens the texture of the frozen ice cream.
Cream
Supplies fat, which makes the ice cream rich and creamy rather than icy.
Vanilla bean or vanilla extract
Provides the main vanilla aroma and flavor.

The step that matters

Boil and stir constantly. Constant stirring keeps the cream and sugar from scorching on the bottom of the kettle. Scorched dairy tastes bitter and burnt, and that flavor carries through the finished ice cream.
