Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and body, giving the ice cream its smooth, rich texture.
Macaroons
Crumbled into the base, they add almond flavour and body to the custard-style mix.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer.
Sherry
Adds aroma and flavour, and its alcohol helps keep the frozen texture softer.

The step that matters

Beat until perfectly smooth. Beating while the mixture is nearly frozen breaks up ice crystals and incorporates air, so the finished ice cream is smooth rather than grainy.
