Scallop Shells for Luncheon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stew the mushrooms and chop them into small pieces.

  2. Combine the mushrooms with small pieces of cold veal, chicken, turkey, lamb, or boned fish.

  3. Moisten the mixture with a little Mushroom Sauce and broth, or White Sauce, but use very little.

  4. Sprinkle the top with bread crumbs, butter, pepper, and coarse sea salt.

  5. Bake in a preheated oven at 400°F (200°C) until well browned.
