Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Releases gelatin and flavor into the water as it simmers, giving the broth body.
Flour
Thickens the soup slightly when mixed with cream and stirred in.
Sweet cream
Adds richness and a smooth, creamy texture to the finished soup.
Lemon juice
Adds acidity that brightens the flavor of the broth.

The step that matters

Adding the cream and flour mixture. Flour mixed into cream can clump if added directly to hot liquid. Mixing it smoothly first and stirring well keeps the soup even and thickened, and boiling the cream first helps it stay stable.
