What each ingredient does

Flour
Thickens the broth into a roux when cooked with browned lard.
Lard
Provides fat for browning and frying the flour into a roux.
Chicken
Adds savory meat flavor and body to the stew.
Beef
Adds rich meaty flavor and body to the gumbo.
Onions
Add sweetness and savory depth as they cook into the broth.

The step that matters

Browning the lard and flour. The flour must be cooked in the hot fat until browned, since under-browned flour leaves a raw, pasty taste and weak color, while over-browned flour turns bitter. Stirring steadily keeps it from scorching.
