Ingredients

Directions

  1. The night before roasting, cover the beef with black pepper.

  2. Wash off the pepper and season the beef with a little coarse sea salt.

  3. Place the beef in a roasting pan with the bone side facing the fire.

  4. When nearly done, turn the beef so the fleshy part is next to the fire and baste with drippings.

  5. Check the juice; if it looks red, cook a little longer.

  6. Mix 1 tablespoon of browned flour with water until smooth and use it to thicken the gravy in the pan.

  7. Serve the meat on a hot dish with some gravy poured over it and extra gravy in a sauceboat.
