Beef Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the cold beef into small pieces and season with salt, pepper, mace, and sweet herbs.

  2. Add cold gravy, or if unavailable, use bits of butter and lard with a little water and 1 teaspoon of flour mixed in.

Assemble and bake

  1. Make a plain pastry, roll it out to fit your pie plate, and line the plate with it.

  2. Place the seasoned beef and some gravy in the center of the pastry.

  3. Fold the pastry edges to meet in the middle, pinch to seal, and prick the top with a fork.

  4. Bake in a preheated oven at 400°F (200°C) until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold gravy
Adds moisture and richness so the filling stays juicy as it bakes.
Butter and lard
Add fat that bakes into a short, tender texture in the filling.
Flour
Thickens the liquid mixed with the fat so the filling holds together.
Bits of cold beef
Form the main meat filling, giving the patties their savory body.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, butter, flour):

  1. Parsleyfits better
