Blood Pudding

Ingredients

Directions

  1. Catch the blood as it runs from the hog and stir it constantly until perfectly cold.

  2. Thicken the blood with rice or oatmeal.

  3. Add chopped beef fat and season with salt, pepper, sage, and chopped red pepper pod.

  4. Fill large casings with the mixture and prick them with a fork to prevent bursting.

  5. Boil the filled casings and then smoke them.
