Hop Teast
Ingredients
Directions
Make the starter
Boil a large handful of hops in 2 quarts of water until it becomes a strong tea.
Strain the tea into a jar and add 1 pint of flour; stir until very smooth.
Once cool, add ½ cup of yeast and set in a warm place until light.
Store
Seal tightly, and always make fresh yeast before using all of it.

What each ingredient does
- Flour
- Thickens the liquid into a smooth batter and supplies starch for the yeast to work on.
- Yeast
- Ferments the mixture, producing gas that makes it rise and turn light.
The step that matters
Add the yeast only once the tea is cool. Yeast is a living organism, and very hot liquid can kill it. Cooling the tea first keeps the yeast active so it can ferment and lighten the mixture.
